Amenity categories are used to group amenities. This grouping can be used in the Reservation Manager to be able to filter on a specific group of Amenities, for example, to filter on location amenities (Configure search criteria and search result reservation manager). 
The same is used in the webmanager, to group certain amenities, like USP's. and to create certain filters:
